| SammyJo`s pancakes | Pancakes 2 eggs, lightly beaten 2 1/2 C. buttermilk (or Almond or Hazelnut or Oat milk) 3 T. coconut oil, melted 1 t. vanilla (optional: almond extract, orange extract) 2 C. flour 2 t. sugar 1 T. baking powder 1 t. baking soda 1 t. salt Optional: 2 C. blueberries (will stick a little to the pan) Preheat griddle. Melt coconut oil and set aside to cool, but remain liquid. In a small bowl, mix eggs, buttermilk, vanilla and flavors. In a large bowl, combine dry ingredients. Add egg mixture to dry ingredients. Add coconut oil and mix just until blended. Mix in optional blueberries. Do not over mix.
Using a large spoon or ladle, pour batter onto hot (medium high) griddle oiled with coconut. Flip once, when pancake begins to brown. Cocnut oil will make them brown faster than usual. Serve hot with maple syrup, or bananas foster. Serves: 4 to 6.

| Laura`s artichokes | Cut off the stem and peel the outside, hard, sharp leaves. Steam them in the microwave or in a pot on the stove until they're tender. Then sauté them on the stove in a little olive oil, herbs, sea salt and maybe garlic. It's delicious!

| Jan`s artichokes | You can cut the stem off and steam them in a covered pan for abot 15 mins. then get some olive oil, garlic powder salt and pepper and mix it. Then, you pull out the petals and dip the bottom of the petal in the oil mixture and scrape the petal between your teeth. Once the petals are all gone then you can eat the soft center which is called the heart. Dip in the oil and eat it. Some people make a breadcrumb stuffing like you do for baked stuff shrimp, and stuff in between the petals, drizzle with olive oil and steam standing up in covered pan with little water in the bottom of the pan. then can be transfered to a hot oven just to brown the stuffing. | Anne`s artichokes | Artichokes. I would add, the ones I've gotten at the store have bugs & spiders. I soak them upside down in water for about 10 min. & rinse again before cooking. They're a finger food experience you'll love!:)))
P.S. Everyone at the table gets their 'own' Artichoke. Conversation over the Artichoke is fun! The object is to get to the Artichoke Heart, but be careful of the thorny stickers! |

| Fast Clear Soup | one onion one clove 2 sticks celery 1 carrot
bouquet garnish...1 sprig thyme,marjarom,and parsley, or half teaspoon mixed herbs in a bag 2 pints water pinch sea salt 4 teaspoons agar-agar Chop onion coarsely and stck the clove into one of the pieces.Finely chop carrot and celeryand add the bouquet garni,salt and water.Bring to a boil and simmer for 15 minutes.Stir in the agar-agar and simmer for another 5 minutes.Strain through a fine strainer. If peas are available add as a garnish.

| banana lemonade | 1 large banana 1/4 cup fresh lemon juice 2 Tbsp. water 4 tsp. honey 6 ice cubes 2 small fresh mint leaves lemon slice
In the container of an electric blender, combine the banana, lemon juice, water, honey, ice and mint leaves. Blend until smooth. Pour over ice cubes in a tall glass and garnish with lemon.

| Greek Artichokes | Frannie's Greek Artichopes:
After washing whole artichokes, slice the top point off, cut with scissors, the tip of each leaf, cut off the stem from the base, and trim off the end of the stem. I save leftover squeezed lemons in a freezer bag. In a large round pan with top, place the trimmed artichokes, place stems in between each choke, with a frozen lemon half, add 2 1/2 inches of water. Heavily sea salt artichokes, drizzle 2-3 T. olive oil over top of chokes. Bring to a boil, cover then simmer for 1 hour. Dipping sauce: drawn butter, sea salt, lemon or mayonnaise, sea salt, lemon. My grandparents came from Greece, and this is the way I learned from them. Found out years later the stem is as good as the choke. So many years lost. LOL |

Just thought I'd try and put together something that I like to eat that really packs a lot of nutrition. You really can put anything in that you like but this is what I've been using. I have a little plastic bag of it sitting next to my desk here at work and will enjoy it for lunch. I think what I was trying to stress was that the nuts that we eat should be raw and sprouted or soaked so the enzyme inhibitor is removed. Anyway, currently this is what I put into my cereal/trailmix:
1. Raw sprouted Almonds, about 12 (from www.sproutedalmonds.com) 2. Raw sprouted pumpkin seeds, 1 tsp. (by GoRaw) 3. Raw sprouted sunflower seeds, 1 tsp. (by GoRaw) 4. Raw sprouted flax seeds 1 or 2 tsps.(by GoRaw) 5. Organic raisins (handful) 6. Salba, 2 tsps.
I hope to add some raw walnuts to this mix. I'm sure I will come across other things to add but this mix sure does pack a whollop of a nutritional mix.
